Chop Suey

Chop Suey is a traditional China dish of meat stewed and fried with bean sprouts, bamboo shoots, and onions. 

 

Ingredents:

 

  • 175 g skinless boneless chicken

  • 1/2 cup chopped celery

  • 2 grated onions

  • 1/2 cup green beans

  • 1 cup bean sprouts

  • 1 teaspoon ginger

  • 2 cloves garlic

  • 1 teaspoon of starch

  • 1 teaspoon soy sauce

  • 2 tablespoons broth

  • 1 tablespoon rice wine

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon sugar

  • Corn oil (vegetable oil replaceable)

  • Sesame oil

  • Salt to taste

 

Preparation:

1. You put a lot of oil in a wok and add sesame oil.

2. You cut the chicken and sets in the oil.

3. You add the garlic, ginger and pepper in the wok for 30 minutes.

4. You put all the vegetables in the wok and mix with salt and sugar.

Mapo Tofu

Is a popular Chinese dish from China's Sichuan province. It consists of tofu set in a spicy chili- and bean-based sauce, typically a thin, oily, and bright red suspension, and often cooked with douchi and minced meat, usually pork or beef. 

Ingredients:

  • Tofu 400g

  • Oil 75g

  • Beef 50g

  • Green garlic or leek 50g

  • Ban Dou Jiang (fermented bean paste) 40g

  • 5g chili powder

  • 1g ground pepper

  • Soy sauce 15g

  • Dou Chi (fermented black bean) 40g

  • 2g salt

  • MSG 2g

  • 120g broth or water

  • Flour 20g wet or only a little flour

 

Preparation:

1. Cut the tofu into square pieces.

2. Soak the tofu in cold salted water. 2 minutes then remove it.

3. Chop the beef, green garlic or leek.

4. Heat the oil in a pan and put the minced meat. Saute a little and take Ban Dou Jiang.

5. When the oil has a slightly red color, take Dou Chi (fermented black bean) and ground chile pepper or chopped. Fry a little, add the chopped leek, and then a little white wine. Pour broth or water, MSG, soy sauce, tofu end ..

6. Remove the pan occasionally. 2 minutes after taking a type of wet flour or flour only.

7. Heat all three minutes after you can be served on a plate. Ground pepper and pour over the plate.

Dim Sum

Dim Sum means to touch the heart. This dish is very traditional in Chinese and is taken as tempentie. They are rolls stuffed with fruits, vegetables, meats or seafood.

Ingredients:

  • 1 package wonton dough

  • 250 g of minced pork

  • 50g chopped water chestnuts

  • 1 tbsp. light soy sauce

  • 1 tbsp. rice wine

  • 1/2 tablespoon sesame oil

  • 1 onion cut into thin rings

  • 1 tbsp. grated fresh ginger

Preparation:

1. Mix well in a bowl of pork, chestnuts, soy sauce, rice wine, sesame oil, scallions and ginger.

2. Put a spoonful of the filling in the middle of a square of dough wanton. Fold the dough over the filling to form folds and without closing the top. And prepare all the dim sum.

3.Put the dim sum in a bamboo basket on baking paper or cabbage leaves with holes to pass the steam

4.Putting the basket on a pot of boiling water, cover and cook for 15 minutes to steam.

5. To make the sauce, combine the remaining soy, rice vinegar and dashi broth in a bowl. Serve immediately with the sauce (or other sauce to taste like sweet and sour sauce).
